I'm a true oatmeal cookie monster... I only counted, as well as January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of them yet? (? You'll find all my oatmeal cookie recipes right there!) They are some of the most popular recipes in my website cause they taste really sweet and cozy, just like traditional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!
That means you will start with whole wheat germ (or gluten-free, if you would like ) and immediate oats (such as those... or these for a gluten-free version!) . Instant oats are thinner and smaller than traditional rolled oats, also you are able to see them in canisters right next to those old-fashioned oats in the grocery shop.
I probably sound like a broken record by now... But because I ? you and need your cookies to flip out totally plump and soft, I'm reminding you again... Measure your yogurt and bread correctly, applying this technique or even a kitchen scale! (? That is the one Look At This I own and adore. A lot of either ingredient will make your cookies taste cakey or dry, instead of chewy. This is particularly true of this oats--they act like little sponges and consume plenty of moisture out of the cookie dough!
Ripe bananas- ideal for baking! Really like all of @amybakeshealthy's yummy & healthier banana recipes!
See these bananas? And all of those brown stains? When it comes to baking with bananas, brown = beautiful! I ? extra speckly bananas because they have so much bright, bold flavor--and also extra natural sweetness! That's the minimum number of brown that I recommend. More is even better!
The remaining portion of the cookie dough's sweetness comes in a different pure ingredient... Pure maple syrup (like this!) . You want the sort that comes directly from maple trees, which is usually sold in thin glass bottles or squat, round plastic jugs. Forget the pancake sugar and sugar!

The pancakes include much more sweetness! The recently purchased, extra plump, perfectly tender ones are ideal... But if you have elderly, slightly dried out raisins (hmm... it sounds absurd to explain dried fruit as dried out! ) , that is fine!
Only add them to a microwave-safe bowl, and put water on top till they're completely covered. Seal plastic wrap across the surface, and then microwave the bowl on high for 1 minute. Should you allow the raisins sit while mixing together the cookie dough, this little trick hydrates them they're incredibly juicy--and that makes a large difference in these cookies as soon as they're baked!

Yields: 15 cookies
These oatmeal cookies are soft, chewy, and full of banana flavor! The recognizable comfy spices and plump blueberries make these even more irresistible. They will keep for at least one week if kept in an airtight container in the fridge --should they last that long!
1 cup (100g) instant oats (fermented if required and measured like this)
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 teaspoon baking powder
1 1/2 tsp ground cinnamon
1/4 teaspoon salt
1 tsp vanilla extract
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Let the cookie dough rest for 10 minutes.
With a spoon and spatula, dip the cookie dough to 15 curved scoops onto the sheet, and apply to the desired thickness and width by means Healthy Chocolate Chip Banana Oatmeal Breakfast Cookies Amy's ... of a spatula. Bake in 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to measure both the oats and flour properly using this method or a kitchen scale. (? That is the one I have and enjoy!) Too much of either can dry out of the cookies and render them cakey rather than chewy.
Immediate oats are also known as quick-cooking or moment oats. They are available in massive canisters, just like conservative oats. They're not those at the small flavored loaf of bread. To make your own, include the same amount of classic oats to a food processor, and pulse 10-12 times or until the oats will be approximately 1/4 to ? of their original size.
For the gluten-free flour, I suggest the following mix: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, two tbsp (15g) brown rice flour, and 1/2 teaspoon xanthan gum. Most store-bought gluten-free flour blends (like that one!) Will also work, if quantified like this.
For the best results, use the ripest and spottiest bananas you can find!
In case your pancakes are elderly, dryer, and not too plump or succulent... Add them into a microwave-safe bowland pour water on top till they're totally covered. Seal plastic wrap over the surface, and then microwave the bowl on high for 1 minute. Should you allow the peppers sit while mixing together the cookie dough, then this little trick hydrates them so they're really soft and juicy!
